When I click on "italics" when writing letters/emails?

Why despite all my efforts can't I lose the darned thing? After I have used the italic icon I try to disconnect it. I point my arrow everywhere on the screen and the box surrounding the icon disappears but as soon as I recommence typing everything I write is still in italics. Please help.
